I used to work at this place in west Virginia that they add the cheese and pepperoni AFTER cooking the pizza. We freshly shredded the cheese everyday and made our own sauce. I personally prefer my cheese bad pepperoni on before it goes in the oven and you could request this, but the place the standard way was to pout the cheese and pepperoni on after. People fucking loved it tho and we started freezing them and sending them across the country which like imo kidna defeated the purpose, but we were always busy.

WV native here. I understand why folks are turned off by DiCarlo’s. It’s different. It’s not for everyone.

I had it last night. Because I fucking love it.

  2. It’s good stuff and a whole little regional style, I’ve had it in SE Ohio

There are worse regional styles. I’ve always wanted to try one of these

Ohio Valley pizza has a long and storied history in the US pizza tradition, having been around since 1946, right after the end of rationing during WWII. That being said, it’s an atrocity and they need to get some flame on that pseudo Sicilian pizza. I get it, they didn’t have the right oven or whatever immediately after the war, but we have the right ovens now and can actually cook our toppings properly.

Friends don’t let friends eat DiCarlos.

4/10, but back when i smoked, this would have been a texture wonder-world for me. I’d eat it.

I’d eat it like this and have no problem. I’d of course adjust the pepperoni, but yknow.

Well…I guess nobody has ever had the roof of their mouths blistered this way….I’d toss it under the broiler for a few minutes personally…

Why did i know this was dicarlos… It’s hit or miss really. I’ve had it where all the cheese is melted & the toppings were adhered to the cheese. Other times I’ve had it look like your picture 😆
